(our sister company), Alcatraz Brand® crabmeat is pasteurized in small batches, ensuring consistent quality and freshness in every pack. Over two years in development, we have mastered the process of heat pasteurization while retaining the color, texture and most importantly the superior taste of fresh hand picked Dungeness crabmeat consumers are accustomed to. Each batch of our crabmeat undergoes stringent quality control from the handling and cooking process to our "blue room" where we inspect the meat under black light, ensuring that all of our product is virtually shell-free. A sample of every batch is then physically tasted by our long-time "crab master" guaranteeing the sweet, delicate flavor before the product undergoes pasteurization. Each 8oz.

Lot Numbers All lots/batches of our processed pasteurized crabmeat are assigned a specific “Lot Number” located on the bottom of each unit. These numbers are for our internal use in tracking the date, time, temperature and number of units processed at our facility. The pre-assigned “Lot Numbers” have been created using a random number generator. Although the numbers assigned may, from time to time, seem to be somewhat sequential they are computer generated in this random manner to assure that they do not repeat and shall never be duplicated. The “Lot Numbers” do not represent anything other than a specific numeric assignment for the sole use of tracking every unit of crabmeat processed by Alcatraz Seafoods and our parent company North Coast Fisheries, Inc. for the reasons above. The removal or alteration of any pre-assigned lot numbers may be prohibited by law and subject to full liability and/or criminal prosecution where applicable. Pasteurized Crabmeat Handling/Labeling Instructions Pasteurized crabmeat is a perishable item and must be kept refrigerated and handled safely as all fresh, refrigerated seafood products. Crabmeat is very delicate. Pasteurized crabmeat is to be stored in the coldest part of the refrigerator below 35ºF. Pasteurized crabmeat is kept in hermetically sealed containers and sent for heat treatment. This gives it an extended refrigerated shelf life. The seal should not be broken and product should be stored at 32ºF to 35ºF. For best results, we recommend keeping the product packed in ice and under refrigeration at just above freezing, thus, it can remain safe for up to 6 months. Although pasteurized product can last as long as 18 months if refrigerated properly, we do not recommend storing it for more than 6 months to ensure the quality and safety of our product. Use the following guidelines and mark all containers with a “Use By” date upon receipt: 6 months if kept at 33ºF to 35ºF. -1 Week (for every 24 hour period) if kept at 36ºF to 37ºF. -8 Weeks (for every 24 hour period) if kept at 45ºF. Once opened use within 3 days. Pasteurized crabmeat is a very versatile seafood and can be used in cocktails, appetizers, salads and soups. Handle safely and enjoy!
